How to be a Manipuri chef in 5 minutes: Learn how to cook 'Ngataok'

It is a truth universally acknowledged that Manipuri people love their food. Wholesome, healthy food that respects the produce used to make it, Manipuri cuisine is basically soul food. This week, like always, we were on the hunt for good food in Delhi and found a tiny restaurant in Green Park Extension called North East Flavours.

Manipur food is all about simple flavours, for which they use local ingredients like ginger, garlic, dry fermented fish, dried meat, mustard leaves, passion fruit leaves, and bamboo shoot fresh or dry. The focus is on keeping the star of the dish the main ingredient used to make it, be it fish, meat, or greens.

At North East Flavours, head chef Lian showed us how to make Ngataok, an easy-to-cook Manipuri fish broth dish.

Ingredients used:

  • Red snapper
  • Tomato
  • Spring onion
  • Green chilli
  • Ginger
  • Garlic
  • Lemon leaf

The dish only takes 10 minutes to cook and served.
